mandarin cinnamon swirl loaf

can you tell i have a thing for mandarin flavor in baked goods? gluten & dairy free.

ingredients:

  • 1/4 c. butter, room temperature

  • 10 tbsp. sugar, divided

  • 1 egg

  • 1/3 c. cream cheese

  • 1/4 c. mandarain juice

  • 1/2 tsp. vanilla extract

  • 1 c. all-purpose flour

  • 3/4 tsp. baking powder

  • 1/2 tsp. baking soda

  • 1/4 tsp. salt

  • 1/4 c. almond milk

  • 1 tsp. cinnamon

  • 1 tsp. grated mandarin peel

directions:

in a small mixing bowl, cream together butter and 1/2 c. sugar. add the egg, cream cheese, almond milk and vanilla; mix well. sift the flour, baking powder, baking soda and salt in a separate bowl, the add to wet ingredient bowl — stir mixture just until moistened. put aside.

pour half of the batter into a loaf pan coated with nonstick cooking spray or lined with parchment paper. in a separate bowl, combine cinnamon, mandarin peel and remaining sugar then sprinkle over batter. add the remaining batter; cut through batter with a knife to swirl. sprinkle with remaining sugar-cinnamon-mandarin mixture.

bake at 350°F for 30-35 minutes or until a toothpick comes out clean, then enjoy!
