copycat cinnabon pretzel bites

the same cinnamon-sugar pretzel bites you know & love, but yeast-free & slightly healthier!

ingredients:

for the bagel bites

  • 1 cup gluten free 1:1 flour

  • 1/2 cup almond flour

  • 1 tsp. baking powder

  • 1.5 cups plain greek yogurt

  • 1 tbsp. honey

  • 1/2 tsp. cinnamon

  • 1/4 tsp. salt

for the coating

  • 1 egg, whisked

  • 2 tbsp. sugar

  • 2 tsp. cinnamon

  • 3 tbsp. vegan butter, melted

directions:

preheat oven to 375.

in a large bowl, fold together flour, almond flour, yogurt, and baking powder with a wooden spoon. add honey and cinnamon, and mix again. should form a loose dough.

transfer dough to a counter / board (sprinkled with additional flour) and knead for 5 minutes until smooth.

break dough into four sections. one section at a time, roll into log and cut into 1 inch pieces. smooth out the edges of each pretzel piece then set aside. repeat for remaining sections.

in a small bowl, whisk egg and dip pretzel bites until well coated (egg wash). transfer to baking sheet and bake for 25-30 minutes until golden brown.

once done, remove from oven and let cool for 5-10 minutes. in the meantime, melt your butter and set aside. in another bowl, combine sugar and cinnamon.

one by one, dip each pretzel bite in butter then the cinnamon-sugar mixture until completely covered. set aside on parchment paper once dipped.

serve with cream cheese icing or nutella, and enjoy!
