chicken parmesan nuggets
not your average nuggie. and that’s a good thing.
ingredients:
3-4 chicken tenders, diced
panko breadcrumbs of your choosing, i used gluten free
sprinkly parmesan cheese
1/2 c. flour
2 eggs
salt & pepper
dried oregano
olive oil
basil
marinara sauce & pesto sauce for dipping
directions:
dice the chicken tenders into nugget sizes, season with salt and pepper, and set aside. take out three medium sized bowls. in one bowl, whisk the eggs. in the next bowl, mix 2:1 parts breadcrumbs to parm cheese - so for example, i did 1/2 c. breadcrumbs and 1/4 c. parm cheese (plus a lil extra hehe). in the last bowl, add your flour. add about 1/2 tsp. dried oregano to the mix as well.
take your seasoned nugs and one at a time, dip them in flour, eggs , then coat them with the breadcrumb/parm mixture. place coated nugs into air fryer.
air fry at 390 for 15 minutes, or until golden brown & crispy. once done, sprinkle with extra parmesan, a bit of basil, and serve with marinara sauce & pesto for dipping!
